I really do love pecan pie. It is my favorite thanksgiving pie. I like pumpkin. And I like apple. I particularly like my apple cranberry pie, which I also made this year with the help of my niece (My niece and I made both pies together this year).
But pecan pie is my favorite.

That said, I have never made a pecan pie that I have been happy with. For whatever reason – last year I blame the orange zest – it hasn’t worked out the way I want.

I am not going to lie – I have never been a huge fan of Pop Tarts. I went through a short phase during which they intrigued me in my first year of college, but I’m pretty sure that came from my amazement that I could eat whatever I want, given that I no longer lived under my parents’ roof. I think they are always stale and almost always lacking in flavor.
Turns out that this is not true of homemade pop tarts – these “toaster pastries,” as I have decided to call them, were neither stale, nor lacking in flavor. When I saw them on Smitten Kitchen, I was just thrilled. I could not believe that something Deb called a Pop Tart looked so good (I’ve borrowed a photo from her for this post to accentuate that – I forgot to take pictures and hope she doesn’t mind!). Apple pie is delicious always. Well, unless it’s bad. But I do love apple pie.
When the holidays come, I always want to add something special to apple pie – something to say “hey! happy holidays!” I’m probably crazy, but this pie is incredibly good so you should make it.
It comes from “The Best Recipe,” a Cook’s Illustrated Cook Book. It’s a great cookbook – they went through and tested the recipes a number of different ways. Then they print the best.
